Ingredients
Serves: 4
- 1 small whole chicken
- 2 tablespoons butter
- 1 onion, minced
- chicken stock or water, as needed
- 2 bay leaves
- 2 sprigs thyme
- salt and pepper to taste
- 4 potatoes
- 5 small carrots
- 200g button mushrooms
- 3 stalks celery
- 3 cloves garlic, minced

- Cut chicken into pieces. Heat butter in a frying pan and add chicken pieces. Brown pieces on all sides then transfer to a large heavy pot.
- Brown minced onion in the pan and and add to the chicken. Add chicken stock or water to cover chicken halfway, bay leaves, thyme, salt and pepper.
- Place on medium heat and simmer for about 30 minutes.
- Cut potatoes and carrots into cubes. If using baby carrots, you don’t have to cut them. Chop celery. If the mushrooms are large, cut in half.
- After the chicken has simmered for 30 minutes, add the vegetables to the pot. Simmer until the vegetables are tender, about 30 further minutes.
- Add more water as needed during cooking. Add garlic and remove bay leaf in the last 5 minutes of cooking.
