Fried eggs and tomatoes

    There are times when one does not feel like cooking, and you just want something done in a few minutes. Fried eggs and tomatoes are a lovely pairing and low carb too!

    Ingredients
    Serves: 1 

    • 1 tablespoon butter
    • 1 tomato, sliced
    • 2 eggs
    • salt and pepper, to taste
    • 1 spring onion

    Method
    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Melt the butter in a frying pan over a medium heat then add the tomato and fry for 1 minute on one side before turning over. Add the two eggs and season.
    2. Cook for around 5 to 10 minutes, depending on how you like your eggs. The yolk should be hot through and the whites should be evenly white throughout and not runny.
    3. Just prior to serving, cut the onion using scissors right into the pan. Transfer to a warm plate and serve immediately.
