    About this recipe: A wonderful vegetarian pasta recipe with shiitake mushrooms. Wonderful served with some crusty garlic bread and a chilled glass of white wine.

    Ingredients
    Serves: 2 

    • 200g farfalle pasta
    • 200g shiitake mushrooms
    • 3 tablespoons butter
    • 1 onion, minced
    • 2 cloves garlic, finely chopped
    • salt and pepper, to taste

    Method

    1. Bring a saucepan of water to the boil over a high heat then add the pasta and cook according to the instructions on the packet, or until al dente. Drain.
    2. Remove and discard the stalk from the mushrooms then slice the cap.
    3. Melt the butter in a frying pan over a medium heat. Add the onion and cook and stir until soft, about 4 to 6 minutes. Reduce the heat to low then add the mushrooms and cook for 5 minutes. Add the garlic, toss in the pasta then season well and mix thoroughly. Transfer to warmed pasta bowls and serve immediately.

    Really enjoyed this simple to make pasta. Was looking for something to use up some closed cup mushrooms and this fitted the bill. Will try it again with the proper mushrooms as in the recipe. - 15 Sep 2016
