Mussels in creamy saffron sauce

    Mussels are cooked simply in a wine cream sauce with a pinch of saffron. Delicious served by itself with bread to mop up the sauce or over pasta or rice.

    Serves: 4 

    • 2 tablespoons butter
    • 1 onion, minced
    • 120ml dry white wine
    • 500g mussels, cleaned
    • 250ml single cream
    • salt and pepper, to taste
    • 1 pinch saffron

    1. Melt the butter in a lidded saucepan over a medium heat then add the onion and cook and stir until translucent. Pour in the wine then carefully place the mussels inside, cover and cook for 5 minutes.
    2. Add cream, salt, pepper, saffron and sauté for another 5 minutes until the mussels have opened and the sauce is hot. Discard any unopened mussels and serve in a warmed bowl with the sauce poured over.
