Mussels are cooked simply in a wine cream sauce with a pinch of saffron. Delicious served by itself with bread to mop up the sauce or over pasta or rice.

Ingredients
Serves: 4
2 tablespoons butter
1 onion, minced
120ml dry white wine
500g mussels, cleaned
250ml single cream
salt and pepper, to taste
1 pinch saffron
Method Prep:5min › Cook:10min › Ready in:15min
Melt the butter in a lidded saucepan over a medium heat then add the onion and cook and stir until translucent. Pour in the wine then carefully place the mussels inside, cover and cook for 5 minutes.
