Turkey pesto pizza

    Tired of the same old pizza toppings? Try this delicious variation made with turkey mince and pesto.

    Makes: 2 30cm pizzas

    • Pizza dough
    • 10g dried active yeast
    • 2 tablespoons caster sugar
    • 1/4 teaspoon salt
    • 120ml warm water
    • 200g plain flour
    • Topping
    • 2 tablespoons olive oil
    • 1 onion, finely chopped
    • 300g turkey mince
    • 4 tablespoons pesto sauce
    • 200g grated mozzarella cheese

      Pizza dough:

    1. Combine yeast, sugar and 3 tablespoons of warm water together in a bowl. Add a couple of tablespoons of flour and knead into a dough. Let stand for 20 minutes in a warm place.
    2. Sift remaining flour into a large mixing bowl, add the dough starter and 120ml warm water. Knead thoroughly for 10 minutes. The pizza dough should be smooth and not sticky.
    3. Cover the dough with cling film and keep in a warm place for 1 1/2 hours, or until the dough has doubled in volume.
    4. Divide the dough in two equally; stretch each piece out and roll into thin pizza bases.

    6. Preheat the oven to 200 C / Gas 6.
    7. Heat oil in a pan over medium heat; add onion and cook until softened. Stir in turkey mince and cook until browned. Season with a salt and cook for a few minutes.
    8. Spoon 2 tablespoons of pesto on top of each pizza base; top with cooked turkey and sprinkle grated cheese on top.
    9. Bake pizzas in preheated oven for 10-15 minutes, or until cheese has melted.
