Rye and caraway seed straws

    This is a Scandinavian inspired recipe made with rye flour and caraway seeds, ideal as a party nibble.

    Serves: 20 

    • 125g plain flour
    • 60g rye flour
    • 1/2 teaspoon salt
    • 1 teaspoon baking powder
    • 100g cold butter, cut into cubes
    • 50ml hot water
    • 2 tablespoons caraway seeds

    1. Preheat the oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. In a bowl, combine the two flours, salt and baking powder and mix well. Cut the butter into the flour and rub between the fingers until the mixture resembles fine breadcrumbs. Gradually add the hot water and bring the mixture together and knead to a ball.
    3. Divide the mixture into 20 pieces, then form into straws about 10cm long. Sprinkle a work surface with caraway seeds and roll the straws over them, so that they pick up some seeds. Transfer to the prepared baking tray.
    4. Bake in the preheated oven for 20 minutes until golden brown and firm. Remove from the oven and allow to cool on a rack before serving.
