Courgette and rice

    Easy vegan summertime recipe - because you can never have enough ideas for courgette!

    Serves: 4 

    • 2 small courgettes, cubed
    • 1 onion, sliced in half and cut into rings
    • 1 red pepper, julienned
    • 3 tablespoons oil
    • 1/3 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1 tomato, chopped
    • 100g rice (you can use a mix of wild rice and long grain rice)
    • 120ml water or stock
    • salt and pepper to taste
    • 2 cloves of garlic

    1. Brown courgette, onion and pepper in 3 tablespoons oil on high heat, for about 5 minutes.
    2. Add oregano, basil and tomato. Cook for 1 further minutes.
    3. Add rice cook for 2 min. Add water, cover and reduce heat to low. Do not stir.
    4. Cook for 20 minutes. When almost all the water has evaporated, but the rice is still not cooked, as a little more water as needed.
    5. Add salt, pepper and garlic. Stir well and serve.


    You can also make this recipe with leftover cooked rice. In that case omit cooking the rice but just add it after the veg are cooked cook together until all is heated through.
