Aubergine dip with garlic and walnuts

    Most aubergine dips require roasting the aubergine in the oven, this one you can make on the hob.

    Serves: 10 

    • 2 aubergines, diced
    • 3 tomatoes, diced
    • 1 onion, minced
    • 3 cloves of garlic, minced
    • 1 carrot, coarsely grated
    • 5 tablespoons oil
    • 6 tablespoons tomato puree
    • 1 tablespoon red wine vinegar
    • 1 tablespoon granulated sugar
    • salt and pepper to taste
    • 50g walnuts

    1. Lightly fry aubergine in 3 tablespoons of the oil. Add tomatoes and simmer on low heat till soft, about 20 minutes.
    2. In a separate pan fry onion and carrots till tender. Add tomato paste, vinegar, and salt and sugar. Fry for a few further minutes till well combined.
    3. Blend everything together in your blender till smooth.
    4. Add garlic and nuts and and pulse till smooth and creamy.
