Courgette twarog pancakes

    Wonderful slightly sweet pancakes made with twarog (or quark) and courgettes. They can be served for breakfast with sour cream or honey.

    Serves: 4 

    • 150g twarog or quark
    • 1 egg
    • 3 tablespoons caster sugar
    • a pinch salt
    • 2 small courgettes, grated
    • 4 tablespoons plain flour
    • 3 tablespoons oil for frying

    1. Mash twarog and egg with a fork; add sugar, a little salt and mix well to combine.
    2. Add grated courgettes, 2 tablespoons flour; mix well to combine.
    3. Heat oil in a pan over medium heat. Place the remaining flour on a small plate. Scoop out mixture for small pancakes, dredge in flour and fry until browned and set, about 3 minutes on each side.


    If you cannot find twarog, you can use well-drained quark or Greek yogurt instead.
