Russian rice and crab salad

    A lovely Russian salad dressed with garlicky mayonnaise. A great use for leftover rice.

    Serves: 8 

    • 90g white rice
    • 1 (400g) tin sweetcorn kernels, drained
    • 250g imitation crab, chopped
    • 4 hard-boiled eggs, mashed
    • 4 pickled cucumbers, minced
    • 1 onion, minced
    • salt and pepper to taste
    • 3 tablespoons mayonnaise
    • 1 clove garlic, finely chopped
    • 1 bunch dill, chopped

    1. Cook rice according to packet instructions. Let cool 4 hours or overnight in the fridge.
    2. Combine rice with sweetcorn, imitation crab, eggs, pickles and onion. Season with salt and pepper.
    3. Combine garlic and mayonnaise. Toss with the salad. Sprinkle over the dill and serve.

    My step mother is belarusian, and she used to make this all the time growing up. I really like this recipe, but my husband is not big on mayo and does not usually eat much of it.  -  02 Nov 2018  (Review from Allrecipes US | Canada)
