Oat crusted chicken burgers

    Serves: 4 

    • 500g boneless skinless chicken breast or chicken mince
    • 100g wheaten bread
    • 50 ml milk or water
    • 1 onion
    • 3 cloves garlic
    • 1 egg
    • 2 tablespoons mayonnaise
    • salt and pepper to taste
    • 4 tablespoons instant oats
    • oil for frying

    1. Pulse chicken breasts in your food processor. Soak bread in water or milk.
    2. Add onion, garlic and egg. Squeeze bread to remove excess liquid and add to food processor.
    3. Process till smooth, then add a couple of spoonfuls of mayonnaise and process again to combine.
    4. Spread oats on a plate. Shape small burgers and roll in oats all around.
    5. Heat oil in frying pan and fry burgers till browned and no longer pink inside, about 3 to 5 minutes on each side.
