Garlic cod

    A simple recipe for a simple weekday meal, mildly flavoured cod gets a lift from garlic and parsley. Be generous with the garlic and parsley, because it will be so much better. I like to serve this with oven-grilled vegetables.

    Ingredients
    Serves: 4 

    • 1 knob butter
    • 3 garlic cloves, chopped
    • 4 cod fillets
    • salt and ground black pepper
    • 1 bunch fresh parsley, chopped

    Method

    1. Melt the butter in a frying pan over high heat and cook and stir the garlic until golden but not burned, about 1 minute. Season the cod fillets with salt, pepper and some of the parsley on one side, then brown them in the frying pan for about 2 minutes.
    2. Turn the fillets, season with salt, pepper, and some of the parsley on the other side, and cook until the fish flakes easily with a fork, about 2 minutes, depending on thickness.
    3. Remove from the frying pan, add the remaining parsley and serve immediately.
