Cheat's mixed salad plate

    Ridiculously easy mixed salad plate ideal for the BBQ or grilled meats or even on its own with crusty bread. Consisting of peppers filled with beetroot salad, tomato and onion salad, coleslaw and spring onion salad and lemony carrot salad. That's it - very easy but it looks like you have done a lot of work.

    Serves: 2 

    • 1 pepper, halved and seeded
    • 4 tablespoons ready prepared beetroot salad
    • 4 tablespoons ready prepared coleslaw
    • 2 spring onions, sliced
    • 2 vine ripened tomatoes, sliced
    • salt and ground black pepper
    • 1/2 onion, minced
    • 1 carrot, grated
    • good squeeze lemon juice

    1. Fill each pepper half with the beetroot salad and place on a large platter.
    2. Place the coleslaw on the platter topped with spring onions.
    3. Lay the tomato slices on the platter, sprinkle with salt and pepper, and scatter over the chopped onion.
    4. In a bowl mix together the carrot and lemon juice and season with salt and pepper, (sultanas also make a nice addition) and place onto the platter.
