    About this recipe: Here's to good health! This homemade granola with pistachios, pumpkin seeds, coconut and fruit has plenty of sweet, warm, spicy, crunchy flavour and good fibre for your daily breakfast.

    Ingredients
    Serves: 6 

    • 300g rolled oats
    • 200g shelled pistachios
    • 200g pumpkin seeds
    • 75g desiccated coconut
    • 300g honey
    • 120ml olive oil
    • 100g dark brown soft sugar
    • 1 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground cardamom
    • 125g raisins or chopped dried apricots (or other dried fruits)

    Method
    Prep:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Preheat the oven to 150 C / Gas 2. Grease a large baking tray.
    2. Stir together the oats, pistachios, pumpkin seeds, coconut, honey, olive oil, brown sugar, salt, cinnamon and cardamom. Spread the mixture evenly on the prepared baking tray.
    3. Bake in the preheated oven, stirring every 10 minutes, until golden, about 45 minutes. Pour into a large bowl, and stir in the fruit. Cool completely. The granola will keep best in a jar.
