Fresh strawberry sauce for ice cream

    This is a beautiful fresh strawberry sauce that will go with any ice cream. Allow plenty of time to chill it overnight.

    Serves: 4 

    • 1 punnet fresh English strawberries
    • 75ml (3 fl oz) apple juice
    • 60g (2 oz) caster sugar

    1. Hull and halve the strawberries.
    2. Put the strawberries in a saucepan with the apple juice and sugar and simmer till the juice is thick enough to coat the back of a spoon. Add more sugar if needed.
    3. Let the strawberries go completely cold and put in fridge overnight. Serve with ice cream of your choice.
