Warm salmon and bulgur salad

    A filling salad of pan fried salmon tossed with warm bulgur wheat, tomatoes, red onion and fresh basil.

    Ingredients
    Serves: 4 

    • 100g bulgur wheat
    • butter or oil, for frying
    • 1 (200g) salmon fillet, cubed
    • 2 tomatoes, chopped
    • 1 red onion, sliced into rings
    • 1 bunch fresh basil leaves, chopped
    • 1 teaspoon lemon juice
    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar

    Method

    1. Cook bulgur wheat in boiling water according to instructions on the packet; set aside to cool slightly.
    2. Heat butter or oil in large frying pan over medium heat; add salmon and cook until the fish starts to flake.
    3. Combine cooked bulgur, salmon, chopped tomatoes, red onion slices and chopped basil in a salad bowl.
    4. Mix lemon juice, olive oil and balsamic vinegar together in a small bowl; drizzle on top of salad and serve.
