Strawberry mascarpone dessert

    This easy summer dessert is simplified version of a strawberry mascarpone cheesecake.

    • 250g digestive biscuits
    • 50g butter
    • 500g mascarpone cheese
    • 200g caster sugar
    • 1 teaspoon vanilla extract
    • 250g strawberries

    1. Preheat the oven to 200 C / Gas 6.
    2. Crush crackers into fine crumbs. Melt the butter and add to the crumbs. Mix to combine.
    3. Transfer the crumbs into a cake tin (a springform tin works best), or a regular tin, lined with foil. Pack the crumbs tightly to make a dense base. Bake till firm, about 10 minutes.
    4. In the meantime, beat the mascarpone cheese and sugar with an electric mixer till smooth. Add vanilla extract. Thinly slice the strawberries.
    5. Once the base has cooled, top it with half the cheese, even out the surface and top with the strawberries. Place the rest of the cheese on top and top with more strawberries.
    6. Refrigerate for at least 1 hour.
