Cucumber boats with vegetarian filling

    Cucumbers filled with radishes and hard boiled eggs are a refreshing summertime starter.

    Serves: 4 

    • 4 cucumbers
    • 3 eggs
    • 1 bunch radishes
    • 1 bunch spring onions
    • 3 tablespoons soured cream
    • salt and pepper to taste

    1. Halve the cucumbers lengthwise. Remove seeds with a spoon.
    2. Place your eggs in a pot and cover with cold water by 3cm. Bring to the boil then cover, remove from the heat and set aside 8 to 10 minutes. Drain, cool in ice water and peel. Mash eggs with a fork.
    3. Shred radishes and mince onion.
    4. Combine radishes, onion, and eggs. Add salt and mix with soured cream.
    5. Fill the cucumber boats with the radish and egg mixture. Chill till serving.
