Ingredients

500g red cabbage, grated
1 teaspoon caster sugar
2 tablespoons balsamic vinegar
2 tablespoons olive oil
salt and pepper, to taste
1 onion, minced
2 apples - peeled, cored and sliced thinly

Place the cabbage in a clean tea towel, then using hands, squeeze cabbage well several times to release juice. Transfer to a serving bowl and sprinkle with sugar.
Combine vinegar and olive oil, add salt and pepper and mix well. Combine cabbage with onion and apples. Mix thoroughly and toss with the dressing; serve.
