Scallops and mushrooms in a cream sauce is a decadent little starter, ideal for a dinner party or special occasion. Serve with a little bread on the side for mopping up the sauces.

Ingredients
Serves: 4
2 shallots, sliced into half rings
100g shiitake mushrooms, thinly sliced
2 tablespoons butter
400g fresh scallops
235ml double cream
salt and pepper to taste
2 cloves garlic, minced

Saute shallots and mushrooms in butter over a medium heat until tender. Add scallops to the pan and brown for 1 minute on each side.
Add cream, heat through, and bring to a simmer for just a minute or two, until the scallops are an even colour throughout yet still tender. Add salt, pepper, and minced garlic. Serve immediately.
