Scallops in cream sauce with mushrooms

    Scallops and mushrooms in a cream sauce is a decadent little starter, ideal for a dinner party or special occasion. Serve with a little bread on the side for mopping up the sauces.

    Serves: 4 

    • 2 shallots, sliced into half rings
    • 100g shiitake mushrooms, thinly sliced
    • 2 tablespoons butter
    • 400g fresh scallops
    • 235ml double cream
    • salt and pepper to taste
    • 2 cloves garlic, minced

    1. Saute shallots and mushrooms in butter over a medium heat until tender. Add scallops to the pan and brown for 1 minute on each side.
    2. Add cream, heat through, and bring to a simmer for just a minute or two, until the scallops are an even colour throughout yet still tender. Add salt, pepper, and minced garlic. Serve immediately.
