Green bean salad with feta cheese

    A wholesome easy mixed salad full of colour and flavour.

    Serves: 4 

    • 300g fresh green beans, trimmed
    • 100g feta cheese
    • 1 bunch radishes
    • 1 onion
    • 2 tomatoes
    • 2 tablespoons white wine or apple cider vinegar
    • 4 tablespoons olive oil
    • salt and pepper to taste

    1. Place green beans in boiling water for 5 minutes. Drain and pat dry.
    2. Crumble feta cheese. Thinly slice radishes. Mince the onion. Cut tomatoes into cubes.
    3. Combine cooked beans with feta, tomatoes, radishes, and onion.
    4. Combine olive oil and vinegar. Toss with the salad. Add salt and pepper to taste.
