Bulgur with black olives and mint

    A great fragrant side dish – bulgur with mint and black olives. You can eat it warm or cold as a salad.

    Serves: 4 

    • 225g bulgur
    • 1/2 (180g) jar black olives, drained
    • 150g feta cheese
    • 1 bunch fresh mint
    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • salt and pepper to taste

    1. Cook bulgur following packet instructions. Slice olives. Crumble feta cheese.
    2. Combine bulgur with olives and cheese. Mince mint and add to the rest of the ingredients. Add salt and pepper.
    3. Combine olive oil with lemon juice. Add to bulgur and toss.
