Easy salmon fishcakes

    If you wnat to try something new with salmon fillets, these salmon fishcakes are quick, easy and very tasty.

    Serves: 4 

    • 500g salmon fillets
    • 1 bunch spring onions
    • 1/3 cup breadcrumbs
    • 1 egg
    • 2 tablespoons honey mustard
    • salt and pepper to taste
    • oil for cooking

    1. Finely chop salmon with a large knife. Mince spring onions.
    2. Combine salmon, spring onion and breadcrumbs. Add lightly beaten egg, then mustard.
    3. Add salt and pepper and mix till evenly combined. Shape mixture into fishcakes.
    4. Heat oil in a non stick frying pan and fry fishcakes till browned, 3 to 4 minutes on each side.
