Creamy courgette and mint salad

    Strips of courgette, green pepper, celery and mint are served with a creamy yogurt and garlic dressing.

    Serves: 4 

    • Salad
    • 2 courgettes
    • 1 green pepper, thinly sliced
    • 2 celery stalks, thinly sliced
    • 1 bunch fresh mint leaves, finely chopped
    • salt and pepper to taste
    • Dressing
    • 200g Greek yogurt
    • 1 clove of garlic, minced

    1. Thinly slice courgettes using a potato peeler or spiraliser. Place the courgette ribbons in boiling water and cook for 2 minutes; drain and cool.
    2. Combine the courgette ribbons, green pepper slices, chopped celery and mint in a large bowl. Add salt and pepper to season.
    3. In a small bowl, mix yogurt and minced garlic to make the dressing: drizzle over courgette salad and toss to coat.
