About this recipe: A hearty and thick soup with chunks of beef and barley. You can use any homemade beef stock you may have on hand and use leftover beef for the soup.


Serves: 6 

  • 1.5L beef stock
  • 100g pearl barley, rinsed
  • 3 potatoes, cubed
  • 1 carrot, cubed
  • 1 onion, cubed
  • 2 sticks celery, cubed
  • salt and pepper, to taste
  • 2 bay leaves
  • 300g cooked beef, cubed

  1. In a saucepan over a high heat, bring the beef stock to a simmer. Add the pearl barley, cover and cook for 35 to 40 minutes, until tender.
  2. Add the vegetables to the stock followed by the salt, pepper and bay leaves. Add the beef and cook over a medium heat for 15 minutes until the potatoes are tender. Spoon into warmed bowls and serve.
