Berry and cream canapés

    These berry and cream canapés are ever so delicate and dainty, just perfect for a summer garden party or other special occasion! Feel free to play around with different berries such as strawberries and raspberries.

    Serves: 6 

    • 450g puff pastry
    • 475ml double cream
    • 100g caster sugar
    • 1 teaspoon vanilla extract
    • 145g fresh blueberries

    1. Preheat the oven to 200 C / Gas 6.
    2. Place the pastry on a lightly floured work surface and roll out to a thickness of about 5mm; cut into circles using a biscuit cutter and arrange on a baking tray.
    3. Bake in the preheated oven for about 15 to 20 minutes until risen and blushed golden brown.
    4. In the meantime, combine the cream, sugar and vanilla in a mixing bowl and whisk until stiff peaks form.
    5. Remove the pastry from the oven and allow to cool. Once cool, cut the pastries in half horizontally, spoon a little cream and place a few berries on the bottom half, and cover with the top half. Serve.


    Instead of 450g pastry, you can also use 2 ready-rolled sheets of puff pastry.
