These berry and cream canapés are ever so delicate and dainty, just perfect for a summer garden party or other special occasion! Feel free to play around with different berries such as strawberries and raspberries.

450g puff pastry
475ml double cream
100g caster sugar
1 teaspoon vanilla extract
145g fresh blueberries

Preheat the oven to 200 C / Gas 6.
Place the pastry on a lightly floured work surface and roll out to a thickness of about 5mm; cut into circles using a biscuit cutter and arrange on a baking tray.
Bake in the preheated oven for about 15 to 20 minutes until risen and blushed golden brown.
In the meantime, combine the cream, sugar and vanilla in a mixing bowl and whisk until stiff peaks form.
Remove the pastry from the oven and allow to cool. Once cool, cut the pastries in half horizontally, spoon a little cream and place a few berries on the bottom half, and cover with the top half. Serve.
Instead of 450g pastry, you can also use 2 ready-rolled sheets of puff pastry.
