Creamy prawn pasta

    This simple prawn pasta dish has a creamy sauce made with soured cream, garlic and fresh parsley.

    • 250g spaghetti
    • 3 cloves of garlic
    • 2 tablespoons butter
    • 500g peeled and deveined prawns
    • 2 tablespoons soured cream
    • salt and pepper to taste
    • 1 bunch fresh parsley

    1. Cook pasta in water with added salt for a couple of minutes less than recommended on the package. Drain and save about 100ml of pasta cooking water.
    2. Melt butter in a large pan over medium heat; stir in minced garlic and prawns. Add soured cream and reserved pasta cooking water; bring up to a simmer and turn off heat.
    3. Stir in pasta; season to taste with salt and pepper. Serve with freshly chopped parsley.
