About this recipe:
This recipe for fish is the easiest one I know, with a delicious herbed savoury breadcrumb crust, ready to eat in 30 minutes. The kids love it with rice.
4 fresh cod fillets
salt and ground black pepper, to taste
1/2 fish stock cube
80g dry breadcrumbs
1 tablespoon chopped fresh dill or 1 teaspoon dried dill
1 bunch fresh parsley, chopped
2 teaspoons dried tarragon
60g butter, cut into pieces
- Preheat the oven to 200 C / Gas 6. Lay the cod fillets in a gratin dish, and season lightly with salt and black pepper.
- Stir the water and fish stock cube together, and pour over the fish.
- In a bowl, mix the breadcrumbs, dill, parsley, tarragon, butter and a pinch of salt and pepper with a fork until crumbly. Sprinkle evenly over the cod.
- Bake in the preheated oven until the fish flakes easily with a fork and the crumble is golden and crunchy, about 20 minutes.
