Cod Bordelaise

    This recipe for fish is the easiest one I know, with a delicious herbed savoury breadcrumb crust, ready to eat in 30 minutes. The kids love it with rice.

    Serves: 4 

    • 4 fresh cod fillets
    • salt and ground black pepper, to taste
    • 100ml water
    • 1/2 fish stock cube
    • 80g dry breadcrumbs
    • 1 tablespoon chopped fresh dill or 1 teaspoon dried dill
    • 1 bunch fresh parsley, chopped
    • 2 teaspoons dried tarragon
    • 60g butter, cut into pieces

    1. Preheat the oven to 200 C / Gas 6. Lay the cod fillets in a gratin dish, and season lightly with salt and black pepper.
    2. Stir the water and fish stock cube together, and pour over the fish.
    3. In a bowl, mix the breadcrumbs, dill, parsley, tarragon, butter and a pinch of salt and pepper with a fork until crumbly. Sprinkle evenly over the cod.
    4. Bake in the preheated oven until the fish flakes easily with a fork and the crumble is golden and crunchy, about 20 minutes.

    Very easy, flavoursome and looked interesting for a simple dinner party. Next time I might try a cheaper fish as the flavours of the herbs are so good.  -  26 Feb 2017

    This was the best fish I have ever had. I used fresh cod fillets and put thin lemon slices under them when I put them in the pan. I used chicken boullion instead of fish boullion. We had leftovers the next night and the fish tasted just as good the second time. I will use less salt next time because the boullion is salty.
