About this recipe: I was bored of looking for biscuit recipes and had nothing like vanilla extract, so I came up with this one inspired by another website. Amazingly no egg!

Makes: 35 cookies

  • 225g butter, room temperature
  • 110g caster sugar
  • 275g plain flour
  • 1 teaspoon mixed spice, ground cinnamon or other ground spices
  • 1 tablespoon drinking chocolate or cocoa powder

Prep:15min  ›  Cook:15min  ›  Extra time:5min  ›  Ready in:35min 

  1. Pre-heat the oven to 170 C / Gas 3. Line a baking tray with parchment, or grease.
  2. Cream the butter in a large mixing bowl until creamy and fluffy. Add the sugar and beat till pale and fluffy.
  3. Sieve in the flour, spice and cocoa. Stir to make a firm dough. The dough will be come quite tough to stir, so use your hands!
  4. Using the wooden spoon and a tablespoon, place balls of the dough on trays. It may be best to use to metal spoons.
  5. Bake in the preheated oven for 10 to 15 minutes, or till firm and golden.
  6. Let the cookies cool for 2 to 5 minutes and then take them off the tray and leave to cool and enjoy!

I had a real craving for a biscuit with my cuppa but rarely buy them to avoid eating them too often. I have NEVER made biscuits before so wanted a straight forward easy recipe and this one is exactly that. I made 12 large biscuits but could have quite easily made 20 smaller ones from the mixture. They were crisp yet moist too but next time I will add more chocolate as the spices were a bit dominant. Still very enjoyable though - 07 Jul 2016


Lovely and easy to make dairy free!! Needs chocolate chips or some nuts to add to the texture but the spices are a lovely touch of flavour. doesn't make as many as it says I did it and mine where fairly big and I made 12. Am going to try different flavours !!! would definitely recommend this simple quick and easy recipy. - 11 Jan 2015
