Plum tarts

    Simplicity at its best. With just a few simple ingredients, you can make these tarts in mere minutes. They really let the plums shine. Serve with custard or vanilla ice cream.

    Makes: 4 mini tarts

    • 1 sheet puff pastry
    • 4 heaping tablespoons ground almonds
    • 6 to 8 plums - stones removed, quartered
    • 4 tablespoons soft brown sugar

    1. Preheat oven to 200 C / Gas 6.
    2. Roll out pastry, cut into 4 equal pieces and line 4 small tart tins with pastry. Prick each pastry with a fork in a few spots and sprinkle with a heaping spoonful of ground almonds.
    3. Place plums on top in a spiral design, skin side up, and sprinkle generously with brown sugar.
    4. Bake in preheated oven for 20 to 25 minutes. Serve tarts warm or cold.
