Chicken breast with apples

    I love the cooking of Normandy, but I also love to mix ingredients from many other cuisines. So to chicken breast with apples I add lime, lemon, orange and ginger, and voila! Fusion chicken.

    Serves: 4 

    • 50g butter
    • 4 chicken breast fillets, cut into strips
    • 3 apples, peeled, cored and sliced
    • 1 (2cm) piece root ginger, peeled and finely chopped
    • 1 lime, juiced
    • 1 lemon, juiced
    • 5 thyme sprigs, leaves only
    • 1 orange slice

    1. Heat half of the butter in a frying pan over medium heat and fry the chicken, stirring, until lightly browned, about 10 minutes.
    2. In another frying pan, heat the remaining butter, and fry the apples until golden, stirring frequently, about 5 minutes.
    3. Add the ginger, reduce the heat to low, stir in the lime juice and lemon juice, and simmer until the chicken is no longer pink at the centre, about 10 minutes.
    4. Stir the apples into the chicken, and pour the mixture onto a serving platter. Sprinkle with the thyme leaves and decorate with the orange slice. Serve any pan juices so the side.
