Cod in egg and butter sauce

In this recipe for cod Polish style, cod fillets are pan fried and served in a rich buttery sauce with hard boiled eggs and dill.

Ingredients

- 600g cod fillets
- 2 tablespoons butter
- salt and pepper
- 100g butter
- 1 onion
- 2 hard-boiled eggs, peeled and diced
- 2 tablespoons lemon juice
- 1 spring onion, minced
- 1 tablespoon minced dill

- Wash fillets and dry with kitchen towels. Cut into cubes.
- Heat 2 tablespoons butter in a frying pan and fry cod for 5 minutes. Add salt and pepper. Transfer the fillets to a plate.
- Add 100g butter to the pan and melt over low heat. Fry onion till translucent, then add eggs, lemon juice and a little salt.
- Transfer fish back into the pan and add spring onion and dill. Heat through and serve.
Tip
Instead of cod, you can use other white fish fillets.
