Tender hake fillets are placed on top of a mixture of cooked spinach, onions, cream and nutmeg, then topped with grated cheese and baked to make a lovely fish dinner.

Ingredients

2 tablespoons butter
1 onion, finely sliced
500g fresh spinach leaves
125ml cream
500g skinless, boneless hake fillets or other white fish fillets
salt and pepper, to taste
1/4 teaspoon grated nutmeg
100g grated cheese, such as Cheddar

Preheat oven to 220 C / Gas 7.
Heat butter in a wide pan over medium heat; stir in sliced onion and cook until golden and softened. Add spinach leaves; cover pan and stir until spinach has wilted.
Stir in cream and season with salt, pepper and nutmeg; simmer mixture for a few minutes, then transfer into a baking dish.
Arrange hake fillets on top and garnish with grated cheese.
Bake hake in preheated oven for 15 to 20 minutes, or until fillets are cooked through.
