Hake fillets baked on creamed spinach

    Tender hake fillets are placed on top of a mixture of cooked spinach, onions, cream and nutmeg, then topped with grated cheese and baked to make a lovely fish dinner.

    Serves: 4 

    • 2 tablespoons butter
    • 1 onion, finely sliced
    • 500g fresh spinach leaves
    • 125ml cream
    • 500g skinless, boneless hake fillets or other white fish fillets
    • salt and pepper, to taste
    • 1/4 teaspoon grated nutmeg
    • 100g grated cheese, such as Cheddar

    1. Preheat oven to 220 C / Gas 7.
    2. Heat butter in a wide pan over medium heat; stir in sliced onion and cook until golden and softened. Add spinach leaves; cover pan and stir until spinach has wilted.
    3. Stir in cream and season with salt, pepper and nutmeg; simmer mixture for a few minutes, then transfer into a baking dish.
    4. Arrange hake fillets on top and garnish with grated cheese.
    5. Bake hake in preheated oven for 15 to 20 minutes, or until fillets are cooked through.
