300g minced meat of your choice (e.g. beef, pork, chicken)
salt and pepper, to taste

Rinse the rice under the cold tap then cook according to the instructions on the packet, until tender, about 15 to 20 minutes.
Preheat the oven to 200 C / Gas 6. Lightly grease a baking tray.
Warm the oil in a frying pan over a medium heat. Add the onion and cook and stir until soft.
Cut the tops off the tomatoes and scoop out the flesh with a spoon. Chop the tomato flesh and combine with the meat, add to the pan with the onion and cook for a few minutes, breaking the meat apart with a wooden spoon. Combine rice and meat and season to taste; cook until the meat is no longer pink. Carefully spoon the mixture into the tomatoes.
Bake for 10 to 15 minutes until the tomatoes are tender. Remove from the oven and serve hot or allow to cool before enjoying.
