Chicken breast with peppers and tomatoes

    A quick and easy way to make chicken that you can serve over pasta, rice, couscous or other cooked grains of your fancy.

    Serves: 4 

    • 500g boneless and skinless chicken breast
    • 1 onion, minced
    • 2 tablespoons butter
    • 3 peppers, seeds removed and cut into strips
    • 2 tomatoes
    • 2 tablespoons lemon juice
    • salt and pepper
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • minced parsley

    1. Wash chicken and dab dry with paper towels. Cut into small cubes.
    2. Fry onion in butter in a large frying pan until translucent. Add peppers and chicken and cook whilst stirring until chicken is lightly browned all around
    3. Add tomatoes, lemon juice, salt, pepper and herbs.
    4. Add a little water if the tomatoes are not juicy. Simmer, simmer, covered, till the sauce thickens, about 15 minutes. Serve with some chopped parsley on top.
