Chicken and bacon roll-ups


    Chicken roll-ups wrapped in bacon and with a mustard filling. Delicious served hot or cold as a starter.

    Serves: 4 

    • 4 (120g) boneless chicken breast fillets
    • 2 tablespoons cream cheese, softened
    • 2 tablespoons prepared mustard
    • salt and pepper, to taste
    • 8 rashers bacon

    1. Lay the chicken breasts on a sheet of cling film then cover with a second sheet. Beat lightly with a meat mallet to flatten. Remove the top piece of cling film and discard.
    2. In a bowl combine the cream cheese and mustard and mix well. Spoon a little filling on to each piece of flattened chicken, season well and roll up and secure with cocktail sticks. Wrap the roll-ups in bacon (two rashers per each piece).
    3. Warm a little oil in a frying pan over a high heat and add the chicken. Cook for 5 minutes, turning over occasionally. Take off the heat and cut the roll-ups across. Arrange in the pan and cook on both sides until the chicken is no longer pink. Remove from the heat and serve hot or cold.
