Puff pastry flowers with peaches

    I use peaches but you can make these pretty pastries using any filling you like such as other fruit, cream cheese, even savoury fillings, in that case omit the sugar and cinnamon.

    Ingredients
    Serves: 4 

    • 250g frozen puff pastry, thawed
    • 250g tinned peaches, drained
    • 1 pinch cinnamon
    • 2 tablespoons icing sugar

    Method

    1. Preheat oven to 200 C / Gas 6.
    2. Roll out puff pastry 2 to 3mm thick. Cut into squares, and make small triangle shaped incisions in each corner of the squares as shown in the picture.
    3. Chop the peaches and sprinkle with cinnamon. Spoon some filling in the centre of each square and and pinch the opposing corners together.
    4. Arrange on a baking tray lined with parchment paper. Bake until golden, about 20 to 30 minutes. Let cool, sprinkle with confectioner’s sugar and serve.
