Aletria (Portuguese sweet angel hair)

    Aletria is a traditional Portuguese desert that is served at Christmas and Easter.

    Serves: 4 

    • 125g angel hair pasta (vermicelli)
    • 950ml milk or water
    • zest of 1 lemon
    • 1 cinnamon stick
    • 250g sugar
    • 1 tablespoon butter
    • 6 egg whites
    • vanilla extract, to taste
    • ground cinnamon for dusting

    1. Break the pasta in pieces. Add milk to a large saucepan and bring to the boil.
    2. Add lemon juice, cinnamon stick and sugar.
    3. Add butter and angel hair pasta and boil for 7 minutes.
    4. Remove from the hob, take out the cinnamon stick an lemon zest and let cool a little.
    5. In a bowl beat egg whites with a whisk or a fork with the vanilla and gradually add this to the cooked pasta. Stir well to combine.
    6. Place the saucepan on the hob once more over low heat and stir for 25 seconds, just so the eggs thickens, do not overcook or they will curdle.
    7. Tip pudding in a serving bowl and dust with a little cinnamon.
