1 tablespoon olive oil
1/2 red pepper, seeded and minced
2 garlic cloves, minced
minced fresh parsley
2 tablespoons balsamic vinegar
salt and pepper

Heat oil in a frying pan and fry pepper till soft, about 5 minutes. Add garlic and a little parsley. Continue frying for a further 30 seconds, then remove from the hob. Tip contents of the pan in a bowl and set to one sidel.
Salt and pepper scallops and fry them in the same pan over medium heat for 5 minutes. Deglaze with balsamic vinegar and add the red pepper. Fry for a few more minutes till the scallops are no longer translucent. Serve at one on a bed of greens.
