Zesty lemon chicken

    An easy recipe for chicken breasts seasoned with both lemon zest and juice. Chicken lovers will fall in love with this bright and healthy dish. Serve with chips or rice and vegetables.

    Serves: 2 

    • 2 tablespoons olive oil
    • 1 clove garlic, crushed
    • 1 tablespoon chopped fresh parsley
    • 2 chicken breast fillets, diced
    • salt and freshly ground pepper to taste
    • 3 tablespoons dried breadcrumbs
    • zest and juice of 1/2 lemon, or to taste

    1. Heat oil in a large frying pan. Saute garlic with parsley for 1 or 2 minutes. Add diced chicken, mix well and season with salt and pepper.
    2. Cook for a few minutes before stirring in breadcrumbs and cook for another 5 to 7 minutes, until chicken is browned and no longer pink in the centre. Add lemon zest and juice, adding more to taste if liked. Mix well and serve immediately.

    Not quite sure what I did wrong but none of the breadcrumbs stuck to the chicken and it didn't taste very lemony, too bland for me  -  28 Oct 2016
