Heat oil in a large frying pan. Saute garlic with parsley for 1 or 2 minutes. Add diced chicken, mix well and season with salt and pepper.
Cook for a few minutes before stirring in breadcrumbs and cook for another 5 to 7 minutes, until chicken is browned and no longer pink in the centre. Add lemon zest and juice, adding more to taste if liked. Mix well and serve immediately.
