Toast bread in a toaster, under the grill or over a barbecue till golden.
Spread toast with rhubarb compote.
Cut cheese into slices about 3mm thick. Place a slice of cheese over rhubarb the rhubarb compote.
If desired, garnish with a gooseberry cut in half or a small basil leaf and drizzle with olive oil.
