About this recipe: A tartine is a French open-faced sandwich, and this tartine features an irresistible combination of savoury goat cheese and tart and sweet rhubarb compote. Serve for lunch or as a light supper with salad.


Makes: 1 tartine

  • 1 slice bread, your choice
  • 1 tablespoon rhubarb compote
  • 1 slice goat cheese, such as gouda
  • gooseberries or basil leaf for garnish
  • drizzle of olive oil (optional)

  1. Toast bread in a toaster, under the grill or over a barbecue till golden.
  2. Spread toast with rhubarb compote.
  3. Cut cheese into slices about 3mm thick. Place a slice of cheese over rhubarb the rhubarb compote.
  4. If desired, garnish with a gooseberry cut in half or a small basil leaf and drizzle with olive oil.
