4 cod fillets
1 lemon, halved
ground black pepper to taste
2 slices Parma ham, halved lengthways
drizzle of olive oil
2 to 4 pinches herbes de Provence

Heat barbecue and oil the cooking grate.
In a bowl, season cod with pepper and drizzle with lemon juice.
Roll up each piece of fish and wrap in a piece of ham. Secure the ham with skewers as needed. Drizzle with oil; season with herbs.
Cook on the barbecue, turning frequently, for about 15 minutes or until fish is no longer translucent. Alternatively, cook on a ridged griddle over medium heat.
