Barbecued cod fillets wrapped in Parma ham

About this recipe: Cod fillets are wrapped in a slice of Parma ham, keeping them moist and infusing loads of flavour. Wrapping the fish in ham also helps to prevent the delicate fillets from falling apart on the BBQ!


Serves: 4 

  • 4 cod fillets
  • 1 lemon, halved
  • ground black pepper to taste
  • 2 slices Parma ham, halved lengthways
  • drizzle of olive oil
  • 2 to 4 pinches herbes de Provence

  1. Heat barbecue and oil the cooking grate.
  2. In a bowl, season cod with pepper and drizzle with lemon juice.
  3. Roll up each piece of fish and wrap in a piece of ham. Secure the ham with skewers as needed. Drizzle with oil; season with herbs.
  4. Cook on the barbecue, turning frequently, for about 15 minutes or until fish is no longer translucent. Alternatively, cook on a ridged griddle over medium heat.
