Tabbouleh with tomatoes and fresh herbs

    I love tabbouleh, especially in summer! This tabbouleh is made with couscous and is full of fresh tomatoes, herbs, lemon juice and olive oil. Delicious served with any barbecued meat.

    Serves: 4 

    • 700ml boiling water
    • 200g couscous
    • 4 large tomatoes, diced
    • 3 tablespoons chopped parsley
    • 3 tablespoons chopped coriander
    • juice of 2 lemons
    • 4 tablespoons olive oil
    • salt and ground black pepper to taste

    1. Pour the boiling water over the couscous in a heatproof bowl. Cover and set aside for 5 minutes.
    2. Uncover the couscous, fluff with a fork and add the tomatoes, fresh herbs, lemon juice and oil. Season with salt and pepper, cover and chill before serving.
