About this recipe:I love tabbouleh, especially in summer! This tabbouleh is made with couscous and is full of fresh tomatoes, herbs, lemon juice and olive oil. Delicious served with any barbecued meat.
700ml boiling water
4 large tomatoes, diced
3 tablespoons chopped parsley
3 tablespoons chopped coriander
juice of 2 lemons
4 tablespoons olive oil
salt and ground black pepper to taste

Pour the boiling water over the couscous in a heatproof bowl. Cover and set aside for 5 minutes.
Uncover the couscous, fluff with a fork and add the tomatoes, fresh herbs, lemon juice and oil. Season with salt and pepper, cover and chill before serving.
