About this recipe: This popular Spanish salad is a favourite in summer and is perfect for a picnic or light lunch in the garden!

Serves: 6 

  • 3 large potatoes, boiled and peeled
  • 3 tomatoes
  • 1 green pepper
  • 1 cucumber
  • 1/2 onion
  • 2 hard boiled eggs, peeled
  • 150g pitted green olives
  • 1 tin tuna, drained
  • 50ml extra virgin olive oil
  • 50ml red wine vinegar
  • salt to taste

  1. Dice the potatoes, tomatoes, green pepper, cucumber, onion and eggs to the same size, about a 1.5cm dice. Combine with the remaining ingredients in a large serving bowl and stir well. Serve immediately or chill till serving.
