This popular Spanish salad is a favourite in summer and is perfect for a picnic or light lunch in the garden!

3 large potatoes, boiled and peeled
1 green pepper
2 hard boiled eggs, peeled
150g pitted green olives
1 tin tuna, drained
50ml extra virgin olive oil
50ml red wine vinegar
salt to taste

Dice the potatoes, tomatoes, green pepper, cucumber, onion and eggs to the same size, about a 1.5cm dice. Combine with the remaining ingredients in a large serving bowl and stir well. Serve immediately or chill till serving.
