About this recipe: With homegrown rhubarb, you don't need much to make a delectable pud. I have a patch of rhubarb in the garden and there is nothing better than using fresh ingredients! Serve with custard or vanilla ice cream.


Serves: 8 

  • 800g rhubarb, chopped
  • 150g rolled oats
  • 100g salted butter, melted
  • 100g dark brown soft sugar

  1. Place the rhubarb in a saucepan and warm over low heat for about 10 minutes.
  2. Preheat the oven to 180 C / Gas 4.
  3. Combine the oats, melted butter and dark brown soft sugar together in a bowl.
  4. Pour the rhubarb into a baking dish and sprinkle the oat crumble evenly over the top.
  5. Bake in the preheated oven until golden, about 30 minutes.
