500g courgette, grated
1 bunch fresh dill, chopped
6 spring onions, chopped
salt to taste
2 tablespoons plain flour

Combine the courgette, dill and spring onion. Add salt to taste. Stir well. Stir in the egg till well combined, then stir in the flour. Finally, stir in the garlic.
Heat a large frying pan over medium high heat. Add vegetable oil. When the oil is hot, spoon a tablespoon of the mixture into the pan for each fritter. Cook until browned on one side, about 3 minutes, then flip and cook till browned on the other side and cooked through.
These easy courgette fritters can be adjusted to your own tastes. Other herbs, or a mixture of herb, will work well if dill isn't your favourite - try mint, basil, parsley or chives. Likewise, the onions can be omitted, or you can use regular onion instead.

I followed all the steps and it came out beautifully.

This recipe did not work for me. I squeezed the juice out of the Courgette yet it was still to wet. Ended up a soggy mash in my frying pan. It would not bind even after added more flour and trying again. I have not idea what went wrong. - 17 Sep 2015
