About this recipe: Lovely sponge cakes with gorgeous raisins enclosed within! Can be chilled or had lovely and warm, straight from the oven. Yum!

Makes: 10 to 15 cakes

  • 150g margerine or butter
  • 150g caster sugar
  • 3 eggs
  • 150g self raising flour
  • 75g raisins (or to taste)

Prep:15min  ›  Cook:15min  ›  Extra time:30min cooling  ›  Ready in:1hr

  1. Preheat oven to 190 C / Gas 5. Grease a muffin tin (or use silicone cases).
  2. Cream the butter and the sugar until light and fluffy. Beat in the eggs, then stir in the flour and raisins. Divide mixture between the prepared tin.
  3. Bake in the oven for 15 to 30 minutes, depending on your oven. Bake till browned.

For step 2 I find it easier to mix if you use a whisk
