Perfect Victoria sponge

    This classic Victoria sponge cake is one of my favourites - I bake it for my parents and grandparents.

    Serves: 12 

    • 225g (8 oz) self raising flour
    • 225g (8 oz) caster sugar
    • 225g (8 oz) butter
    • 4 eggs
    • 1 tablespoon milk

    Prep:10min  ›  Cook:50min  ›  Extra time:30min cooling  ›  Ready in:1hr30min 

    1. Preheat the oven to 180 C / Gas 4. Grease and flour two sandwich tins.
    2. Sift flour and caster sugar into a large bowl. Add butter and eggs and beat well till smooth. Stir in a tablespoon of milk. Divide mixture between two sandwich tins.
    3. Bake for 30 to 45 minutes, till cakes test done in centre. Let cool completely before icing or sandwiching with jam and cream.
