Lavender and rosemary biscuits

    A delicious shortbread biscuit with an amazing flavour of lavender and rosemary. Give this combination a go!

    Makes: 10 biscuits

    • 1 tablespoon finely chopped fresh rosemary
    • 1 1/2 tablespoons finely chopped fresh lavender leaves and flowers
    • 1 tablespoon ground allspice
    • 1 teaspoon ground nutmeg
    • 150g self raising flour
    • 50g caster suger
    • 100g butter

    Prep:20min  ›  Cook:40min  ›  Ready in:1hr 

    1. Combine dry ingredients. Rub together with the butter till mixture resembles breadcrumbs. Form into a ball of dough, then roll out on a floured surface till thin. Cut out biscuits into circles.
    2. Bake in a preheated 160 C / Gas 3 oven for 30 to 40 minutes.


    You can dip half in melted chocolate to improve taste.

    I wanted to make a biscuit this morning and had no eggs! This shortbread could not have been easier. I baked mine in a square tin, and sliced them into squares. Delicious! So buttery--  -  17 Oct 2012
